JoAnna Beach, Executive Pastry Chef, Co-Owner
I started off baking and cooking with my grandparents. I loved to taste new flavors and make new foods. This lead me to a basic cooking class in high school, where I learned the most common things like boiling eggs, making pancakes, and icing cakes. I loved the cake portion so much, that I took it the next year to excel and practice. My Senior year is when I knew that being in the kitchen was my life passion, and made the decision to go to the Culinary Arts College of Le Cordon Bleu. There I learned huge amounts of fun new and exciting things. I was taught to filet fish, make stock, how to make the perfect omelet and many other things. The best was when I got to bake; making different cakes, pastries, and breads from around the world. Learning techniques from some of the most amazing chef's, and doing my best every chance I could. Out of school came my extern, where I found myself in a small hole in the wall bakery called Bleu Door Bakery. I was taken in and taught their routines, making cookies, breads of all kinds, scones and bars of the highest quality. I stayed there two fulfilling years as the lead baker, and loved every minute of it! But soon it came time to move to my home town. Once I was home, I still did the occasional speciality cake order, however mostly I focused on my little family my husband and I created. Now I am ready to take on more. I miss the thrill of making people happy with the art of food, and am so excited to partner up wtih Michaela Swearengin to spread happiness through our town, bite by bite!
